
Date chocolate brownies

Raw chocolate brownies packed with nuts and seeds for a delicious treat
Ingredients
Pitted dates | 600g |
Raw almonds | 1 cup |
Raw walnuts or pecans | 1 cup |
Pumpkin seeds | 1 cup |
Sunflower seeds | 1 cup |
Salt | 2 teaspoons |
Raw chocolate | 400g |
Method
1 | Cover dates in water and simmer, mashing until soft. Add more water if necessary. Ensure all water has evaporated |
2 | Roast nuts and seeds on a low heat until crisp and leave to cool |
3 | Chop nuts and seeds using blender until breadcrumbs |
4 | Melt 300g of the chocolate on a double boiler (to ensure it doesn't burn) |
5 | Mix roasted nuts and seeds, salt and chocolate into date mix until evenly distributed. |
6 | Spoon into oven dish or metal tray covered in parchment. The mixture should be about 2cm's high. Put in freezer to harden. |
7 | Melt the rest of the chocolate in a double boiler and spoon over hardened date mixture. Flatten to give a even coat of chocolate. Return to freezer to harden. |
8 | Remove from freezer once fully set and leave to thaw. Turn out of oven dish or tray and cut to desired sizes. Store in fridge. |
