Delicious vegan chocolate cake

You wouldn't guess that this chocolate cake is dairy and egg free

Ingredients

Self raising flour2 cups
Cocoa powder1/2 cup
Bicarbonate of soda1 1/2 teaspoons
Baking powder1 teaspoon
Sugar1 cup
Salt1 teaspoon
Dairy free yoghurt (I used plain soya)500ml
Plant oil (I used walnut oil)1/4 cup
Vanilla essence1 1/2 teaspoon
Dairy free butter50g
Icing sugar1 cup
Vanilla essence1/2 teaspoon

Method

1Preheat oven to 175 degrees celsius
2Grease and fit baking parchment to cake tins
3Measure flour, cocoa powder, bicarbonate of soda, baking powder, sugar and salt into a bowl and mix well
4Add yoghurt, oil, vanilla essence to dry ingredients and beat well
5Pour into baking tins and bake in the oven for 15 - 20 minutes. Test cake is cooked by sticking a sharp knife into the centre of the cake and ensuring it comes out clean.
