
Sweet potato pancakes

Packed with the super foods sweet potatoes and chia these pancakes are the healthiest start for your day
Ingredients
Sweet potatoes | 3 medium |
Chia seeds | 2 tablespoons |
Flax seeds | 2 tablespoons |
Boiling water | 120ml |
Buckwheat flour | 1/4 cup |
Raisins | 45g |
Coconut Oil | For frying |
Fruit | For topping |
Optional sesame seeds | For topping |
Method
1 | Boil or roast sweet potatoes till very soft and mash well. |
2 | Combine chia and flax seeds in a bowl and stir in boiling water. Leave to set for about 10 minutes. |
3 | In a bowl add the chia and flax seeds, buckwheat flour, raisins and sweet potato mash and mix well. |
4 | In a warm frying pan place a teaspoon of coconut oil. Spoon a tablespoon of pancake mix into your hand and shape into a ball. Place on the frying pan and flatten to get the desired pancake height. Fry until golden on both sides. |
5 | Serve with fruit, yoghurt and seeds - whatever you fancy. |
