Sweet potato pancakes

Packed with the super foods sweet potatoes and chia these pancakes are the healthiest start for your day

Ingredients

Sweet potatoes3 medium
Chia seeds2 tablespoons
Flax seeds2 tablespoons
Boiling water120ml
Buckwheat flour1/4 cup
Raisins45g
Coconut OilFor frying
FruitFor topping
Optional sesame seedsFor topping

Method

1Boil or roast sweet potatoes till very soft and mash well.
2Combine chia and flax seeds in a bowl and stir in boiling water. Leave to set for about 10 minutes.
3In a bowl add the chia and flax seeds, buckwheat flour, raisins and sweet potato mash and mix well.
4In a warm frying pan place a teaspoon of coconut oil. Spoon a tablespoon of pancake mix into your hand and shape into a ball. Place on the frying pan and flatten to get the desired pancake height. Fry until golden on both sides.
5Serve with fruit, yoghurt and seeds - whatever you fancy.
