Wheat & sugar free vegan chocolate cake

Now everyone can enjoy chocolate cake. This ones wheat-free, uses dates and fruit for sweetness and it's vegan. More importantly it's delicious!

Ingredients

Flax seeds3 tbsp
Chia seeds2 tbsp
Pitted dates150g
Bicarbonate of soda1 tsp
Aya or plant based margarine115g
Mixed berries frozen and defrosted80g
Brown rice flour1/2 cup
Coconut flour1/2 cup
Tapioca flour1/4 cup
Cocoa powder1/2 cup
Baking powder1 tsp
Salt1/2 tsp
Cocoa nibs or Brazil nuts1/4 cup

Method

1Measure the flax and chia seeds into a small bowl and add 10 tbsp boiling water. Stir and leave to set.
2Chop the dates and put in a bowl with the bicarbonate of soda. Add 3/4 of a cup of boiling water. Stir and leave to soften.
3Measure the plantbutter and add the softened dates and berries into a large mixing bowl. Combine well.
4Add the flours, baking powder and salt and sift into the fruit and plantbutter mixture. Add the flax and chia seeds. Mix well adding plant milk if it becomes to thick; it should be the consistency of mashed potatoes.
5Fold in the cocoa nibs / brazil nuts
6Put into a greased baking tin and flatten. Put into a 170 degrees celsius oven and cook for 25 minutes. Test that it is cooked through by placing a sharp knife into the centre, it should come out clean, Turn onto a baking rack and leave to cool.
